Le Palais
One of Taiwan's three Michelin three-star restaurants, Le Palais sits on the seventeenth floor of the Palais de Chine hotel. Executive Chef Matt Chen and Head Chef Ken Chan prepare Cantonese banquet cuisine using seasonal ingredients. The Peking duck four ways requires advance ordering. Cherry Valley ducks from Yilan get roasted Cantonese-style with crispy skin. Dim sum includes Chinese spinach and salted egg dumplings. Lunch runs from noon to 2:30 p.m. and dinner from 6:00 to 9:30 p.m., closed Mondays. Lunch dim sum starts under NT$300 while dinner tasting menus range from NT$3,680 to NT$24,880.
