A local friend wanted to take me somewhere really Taiwanese, so we ended up at a 熱炒 (rè chǎo) spot near Da'an Station. Cleaner and slightly more polished than the usual stir-fry place, but the shared dishes and 18 Days beer are still what it's all about.

A side-street ramen shop in Shilin with anime posters, retro bits, and Japanese movies playing on the TV. The spicy tonkotsu comes out foamed white, topped with thick slices of pork belly and firm, bouncy noodles.
