Haidilao
Haidilao (海底撈) is the Sichuan hot pot chain founded in Jianyang in 1994. It came to Taiwan in 2015 with a first store at ATT 4 FUN in Xinyi, and has grown to around 16 locations, including a newer-format store in Breeze Nanshan.
Haidilao is known for its service as much as its broth. The waiting area has free ice cream and snacks, and in the dining room someone can come by to stretch and swing your noodles into the pot (the "noodle dance", NT$88). Broths come in pots split two or four ways, with the tomato broth a signature alongside the expected Sichuan mala. The sliced beef (NT$210 half, NT$420 full) and shrimp paste (NT$245 half, NT$490 full) are the signature add-ins, and half portions make it easier for smaller groups to try more.
Ordering is by tablet or QR code. There's no 10% service charge and no time limit at the table. Reservations can be made through the Haidilao website or the inline app, which is worth doing at peak times.
